1) Start with a scripted section to get the canned responses out of their system. For the second half, shift to a more conversational interview, aiming to convey the same message, but in a more natural format.
2) If the person is struggling to deliver what they want to say, or is speaking too robotically, say something like "So hang on, I'm not sure I understood that, just talk it through for me so I understand it". They usually start talking more naturally, rather than thinking about the camera. In many cases, the more that you can make it feel like a conversation between you and them, the better they will deliver.
3) Do a "pre-interview" with the camera rolling. People tend to be more natural when they don't know the camera is recording.
4) Pump them up! Be charming, complimentary, and gregarious as much as you possibly can. Let them know about the editing process and how you’ll make sure they look and sound great in the finished interview. Keep a smile on your face and showcase the comfortable vibe and confidence that you need them to deliver on camera.
5) Do a prep talk. Whether it's a pre-interview, sending the questions in advance, or just taking 2-3 minutes to ask them warm-up questions. I think most stiff people appreciate getting more time to prepare.
